HISTORY

The Soulhaven ethos

Soulhaven hospitality began in Dinard in 2010. Local man Yann Bucaille, who loved his home town, bought with his wife Lydwine the Villa Bric-à-brac, a Belle Epoque villa on the cliffside, along with the neighbouring property, the former aquarium belonging to the marine biology station of the Museum of Natural History. They restored both these properties, carefully respecting their history and bringing them back to life as a 5-star hotel, opening in 2015 as Castelbrac, the first property of the Soulhaven group.

Availability and friendliness

Sophie Bannier was appointed Director of the Hotel Castelbrac in 2017. In this top-of-the-range establishment she created a bespoke approach to hospitality and holidays.

She is also passionate about embodying and passing onto others her guiding principles: availability and friendliness.

Now Director of Operations, Sophie is a young woman determined to imbue each of the Soulhaven properties added to the group with its own unique character.

Julien Hennote
the gourmet soul of Soulhaven

Julien Hennote is the first chef in Dinard to be awarded a Michelin star. He is the very ermbodiment of a cuisine that is mindful, committed and deeply rooted in the Breton terroir. Now in charge of the Pourquoi Pas restaurant at the Hotel Castelbrac, he enhances local products with his bold creativity and high standards of sustainability.

His approach is both intuitive and responsible, finding a natural home in the world of  Soulhaven, where each property delights in its authenticity and its links to the natural world.

As a leading and inspirational chef, Julien Hennote imbues Soulhaven with a gastronomic vision reflecting the spirit of the location: elegance, sincerity and respect for the rhythms of nature.
